Project: Wine waste INvestigation Europe
The special focus of the project lies in finding a beneficial use for the grape marc left over from organic wine production. Hence processes and technologies need to be developed to_x000D_ (i) optimise the separation and collection of organic grape marc; _x000D_ (ii) to maximise the yield of biologically active compounds (BACs) derived from the organic grape marc; _x000D_ (iii) to identify the BACs and their properties; _x000D_ (iv) to determine the antioxidant capacity of BACs._x000D_ _x000D_ In addition the project will_x000D_ (v) identify uses for the BACs found; _x000D_ (vi) sell the treated and high-quality BACs to food/medical/cosmetic industry;_x000D_ (vii) patent and license the technologies and processes developed;_x000D_ (viii) develop competitive advantage through marketing and selling the new type of wine._x000D_ _x000D_ The Lead P, Tanzer Consulting, was established in 2002 as an international consulting and advisory enterprise in the field of environment and waste management issue and has meanwhile developed to become the biggest company in this field in the Danube region. The company developed and monitored its first European funded projects in 2003 and since 2006 has also focused on R&D in the field of environment and waste management. The company has received awards for its work and projects several times, for example with the “Constantinus Europe”, the “Mercur 2006” or the nomination for the Austrian state award._x000D_ _x000D_ FHA GmbH is active in the field of analysis, studies and quality control for the Austrian Environmental Ministry as well as several companies in the ARA System (green dot-system). In addition to that it conducts studies and concepts in the field of waste management._x000D_ _x000D_ The Department of Chemistry and Biochemistry of Mendel University of Agriculture and Forestry in Brno has one of the best equipped laboratories within the Czech Republic and Europe and, therefore, has a unique position on the specific market of research and development. The teams have worked in projects of the 5th and 6th FP, cooperated with the USA in NATO projects and were involved in bilateral cooperations such as the AKTION or BARRANDE programs._x000D_ _x000D_ J&K Lab is the only operative laboratory in the Czech Republic which determines the total antioxidant capacity. Thus it has a virtual monopoly on the Czech market. The laboratory is focused on research and diagnostics from the biochemical side, but not just from the health point of view, but also for general applications. The company is equipped with a very high standard of relevant apparatus for research and diagnostics laboratory processes. It holds the ISO 9000 Certificate and corresponding methods for analysis are also accredited._x000D_ _x000D_ The CO subcontractor will be Vinopol Santé vineyard and winery. Established in 1935, its present capacity is approximately 5 million liters per year. In the production of dessert aromatic wines, Vinopol Santé currently has the widest assortment in Central Europe. The equipment for technological processing of wine grapes, preparation of wine and preparation of some other products from the base wine (dessert, aromatic wines) is in accordance with the quality requirements not just for domestic but also for foreign markets._x000D_ _x000D_ The interested parties will conduct research to develop and test technologies and processes in order to establish the most appropriate application of antioxidants and BACs for the food, pharmaceutical and cosmetics industries. The study of BACs themselves will focus on natural antioxidants and possibly other particular compounds (natural antioxidants – including trans-resveratrol; polyphenolic compounds, phenolic acids, flavonoids, catechins, tannins, procyanidins, etc.). In particular the use of BACs in place of SO2 in the winemaking process will be investigated. _x000D_ _x000D_ In 2005 an upper limit of SO2 permitted in wine in the EU was set at 160 mg/l for red wines, 210 mg/l for white and rosé wines and 400 mg/l for dessert wines. The WHO recommends a maximum daily intake of 0.7 mg of sulphur oxide per kg of bodyweight. So for an average weight person one glass of white wine is sufficient to reach this limit – not taking into account the SO2 absorbed from air pollution. As little as 20 mg can cause nausea, headaches and dysentery or urticaria. In addition the European Commission’s guidelines (CPMP/463/00) for medicinal products for human use state that sulphur dioxide, also known as E220, can cause severe hypersensitivity reactions and bronchospasm. Furthermore, it also destroys thiamine (vitamin B1), essential for the heart and nervous system, so that a higher demand for this substance is found._x000D_ _x000D_ The results of the research will be made available to other wineries as part of a know-how transfer amongst organic and traditional wine producers. Furthermore, the cosmetic, and food, pharmaceutical industries are very interested in the outcome of the research. Several companies in Austria and the Czech Republic have already contacted the Ps to express interest in using the project results.

Innovative technologies and processes were developed to isolate and extract biologically active compounds (BACs) from residual vine vegetation and waste products from grape processing and wine preparation were established. The CO outputs are: BACs-rich semi-products and their technological process for extraction._x000D_Innovative techniques for preparing wines and other grape-based products were developed with the aim of stabilizing the BACs and increasing the share of antioxidants gained from the total BACs. Furthermore, the restriction of any complementary antioxidant compounds (sulphur dioxide) was investigated. |
