Project: Ultrasonic cleaning and cold pasteurization in liquid carbon dioxide

Project Topic Specific objective of the project is the development of an innovative prototype capable of sanitizing dried fruit, exploiting the combined action of ultrasound and Dense Phase Carbon Dioxide (DPCD), without affecting its organoleptic characteristics. Solid food sanitization techniques now available on the market operate at high temperatures and cause changes in the structure of the product. The use of DPCD has been proposed as an alternative non-thermal technique for pasteurization, but has been used to date only for liquid foods and beverages. In the DPCD technique, food is contacted with pressurized subcritical CO2 for a certain time in batch, semi-continuous or flow-mode equipment in order to inactivate certain micro-organisms and enzymes at temperatures low enough to avoid the thermal effects of traditional pasteurization. ULTRACLEAN project will create and validate a prototype than will be able to make the DPCD technique available also for dried fruit, thanks to the combination of ultrasound and subcritical CO2, paving the way for an innovative sanitization approach, able at the same time to guarantee solid food safety and to preserve taste, texture and flavour of the product.
